Many Thanks

clip_image002On this Veterans Day, I’d like to say “Thank You” to our friends who have served and are continuing to serve in our armed forces. Thank you to John B., Matt R., Tim K., Chancey S., Bill A., and many others who have been in our midst.

Thank you to Marine Lance Corporal Jason Barfield who recently gave the ultimate sacrifice. Though my family did not know you, our friends did and they are especially grieving on this day. Thank you for leaving your beautiful family, friends and your precious fiancée so that our seriously dysfunctional country could continue to offer freedoms that so many in our world will never experience.

Thank you to our neighbors, Jason and Jaime, who have recently returned home safely from serving in the Middle East for the last year. We are so thankful for your safe return!

celtic shamrockI couldn’t possibly post a recipe handed down from my mother-in-law without also posting a recipe from my own mother, one of the best cooks on the face of this planet! Growing up, there were several family traditions that centered around food and St. Patrick’s Day was definitely one of them. There would always be a heaping plate of corned beef, cabbage, a few other veggies and Irish soda bread. I’m not sure when Mom started this tradition, but I’ve enjoyed it ever since!
