2011 Menu #10

The days and nights around here have been filled with tackling the long-neglected but oh-so-needed yard work, painting the family room, and putting together Ikea bookcases. It’s gonna be awesome when it’s all done (the family room – the front yard still has much to be desired). The bookcases are up and “functioning” but they’re nowhere near organized. I will do my best to post pictures tomorrow but Hubbs and I were up until 1AM last night (thanks, Daylight Savings), doing nothing but opening boxes, counting hardware, and putting incredibly heavy pieces of wood together. For FIVE solid hours. “Exhausted” doesn’t even come close to explaining how I feel at the moment.

I am already looking forward to the rest we are going to get next weekend!

I’m needing to make some changes to my menus…I am not a confident cook when it comes to making a dish without reading a recipe. While I don’t mind doing it, my wallet definitely does! I’m going to try and limit my trips to the grocery store by really pondering what I have in my freezer, fridge and pantry, as well as attempting to “skip tradition” with my cooking style.

Recipe card? Who needs ‘em! I’ve been doing this full-time cooking thing for over 6 years now!

Fly by the seat of my pants at the stove? No problem!

See? My confidence is already improved…*gulp*.

The recipes I’ve picked this week were compiled because I have most of the ingredients on-hand (except St. Patty’s Day). The following weeks should be very interesting…and hopefully tasty, but I’m not making any promises…

Corned Beef Brisket with honey-mustard glaze
Boiled Cabbage
Irish soda bread
(one of my all-time favorite meals to make!)


Sloppy Joes with chips and pickles (really good recipe and even the boys like it!)


Eggplant Parmesan with green salad and garlic bread


Glazed chicken with rice pilaf and fresh fruit


I’m off to bed and hopefully a solid 6 hours of sleep ahead of me. Lots of organizing efforts this week – wish me luck!

2011 Menu #8

I can’t wait to tell you all about my trip to Vegas, but I am still quite exhausted since getting home last night. Battled a headache most of the day and life does continue at it’s normal pace once you’re back from a vacation. Oy. I had some seriously grandiose plans to get the entire menu planned for March while I was away from my family for 4 days. Hah! I didn’t look at my menu ONCE.

But we still have to eat. And I most definitely ate my way through my time visiting with friends. So much to tell, so little time. On with this week’s menu!


Sloppy Joes with salty chips and dill pickles


Slow-Cooker Vegetarian Chili With Sweet Potatoes and tortilla chips (didn’t get around to making this last week!)


Pancakes and D’s favorite sausage links


Roasted Chicken with rice pilaf and steamed veggies


Italian Sausage Soup with crusty bread (yep, didn’t make this one last week either…)


Eggplant Parmesan with a green salad and garlic bread (an incredibly easy recipe that yields scrumptious results! No need for 3 eggplants; 1 large eggplant is plenty.)


Probably the (frozen) Teriyaki Chicken or Orange Chicken from Trader Joe’s. Seriously, everyone licks the plate clean with those dishes and I can’t get over how quick, easy and cheap those meals are! Served with rice or noodles, a veggie and some rolls and it’s a fantastic dinner.

If I don’t make it to TJ’s, then it’ll be taco’s.


I’m praying for a solid night’s rest and an uneventful time at the grocery store tomorrow morning. Looking forward to another week with my family and all the adventures that brings!

2011 Menu #7

I had 4 new recipes to try out last week, which I really don’t recommend doing when you have little ones! We’re having the French Lentil soup tonight and I’m really hoping it’s a winner with everyone.

One dinner was a success for Hubbs and I – not for the boys. One of them was a success to Hubbs and nobody else. And another dinner was a complete bust for everyone at the table. To put it in the words of D:

“Mommy, I don’t want this. I want something really really yummy.” (stated in a very matter-of-fact tone!)

Mmm hmmm, so does mommy….

And that’s why I was more than happy when we went out for Chinese food on Friday night!!
